The New York Times published an article in which the science of junk food is explored. It’s a real science but without morals. A science, not from the perspective of nutrition but rather a study of the addictive nature of tastes and aromas and the overriding principle of the bottom line. How do we sell a million a day? I’ve linked to the New York Times article here.
I have a much simpler view of the junk food industry. Strip away all nutrition, fiber and phyto nutrients, add fillers of sugar, high fructose corn sweetening, balance with sodium, package so that one serving would never be filling enough. Price at a level that ensures ubiquity. You have a modern day success story along with an obesity epidemic. Click here to view my Sugar Blues Slide Show.
